Description

Candied Sweet Potatoes is a classic side dish for your Thanksgiving or Holiday dinner table.

Ingredients

4 large sweet potatoes 1 cup light brown sugar 1 cup white sugar 1 tablespoon cinnamon ½ teaspoon nutmeg (or use your favorite seasonal spice combination to taste) 2 teaspoons salt (or to taste) 4 tablespoons water ½ stick butter (4 tablespoons)

Instructions

Peel and slice sweet potatoes. In a medium size bowl add the brown, white sugar, cinnamon and nutmeg and stir to combine. In a cold heavy bottomed pan add 4 tablespoons of water, add a layer of the sliced sweet potatoes to cover the bottom, then sprinkle half of the sugar and spice over the layer of sweet potatoes and repeat. Tate note: Depending on the circumference of your pan you may have more than 2 layers. Turn heat source to medium low, cover pan slightly ajar and cook for about 14 minutes. The water and the natural moisture from the sweet potatoes alone with the sugar will start to caramelize. Resist the temptation to stir the sweet potatoes but do keep a close eye on it (it will form a thick bubbly syrup). After the first 14 minutes of cooking, turn the top layer of sweet potatoes over, cover again slightly ajar and cook for 15 minutes. You want the potatoes to be fork tender so cooking time will depend on how thick you sliced the potatoes and how many potatoes you used (say you have doubled the recipe). If your potatoes are not fork tender within the 30-35 minutes cooking time, adjust heat to low and cook till fork tender. Remove from heat source, fully cover and allow the syrup to cool slightly about 5 minutes or till not bubbling. Add the pads of butter on top, cover again and allow butter to melt. When butter has melted gently stir and serve.

Additional Comments

To make this vegan simply substitute the dairy butter for your favorite vegan butter.
